DIY Waffle Taco

Every morning, I am faced with an epic question.

A question that, depending on how I answer it, will completely affect the course of my entire day. A question that has no wrong answer, but no best one, either. A question that, until this day, was dreaded:

Should I have waffles or tacos for breakfast?

But ladies and gentlefolk of all the land, I am here today to tell you that henceforth, you no longer need to ask yourself that impossible question. Because today, I give you the Waffle Breakfast Taco. Also known as the only thing you will ever want to eat for breakfast for the rest of your days (or at least most of them).

This pocket of magical deliciousness is not only, well, delicious, but super easy to put together. Just cook up some homemade waffles, scramble some cheesy eggs and heat up some sausage patties and bing-bang-boom – breakfast is served!

But in case you need a little more time to wrap this magnificent meal around your brain, here’s how to make it:

 

Making waffle batter

First, whip up your waffle batter. Let it sit for a few minutes so it can thicken.

 

Making waffles in iron

When the batter is ready, heat your waffle iron and grease it, if needed. Ladle a quarter of the batter into the iron, close it and cook it until it’s done or the iron is no longer steaming. Repeat with the remaining batter until you have four beautimous waffles.

Now, make the eggs: Heat oil in a skillet over medium-low heat. Whisk the eggs along with some water and some S & P, then pour the eggs into the hot skillet.

Cook and scramble the eggs until set, then fold in some shredded cheesy goodness.

It’s taco time! Divide the waffles among serving plates and spoon the eggs over one half of each waffle. Top with a cooked sausage patty or two or five, then drizzle on some spicy sriracha if you want (you can also drizzle on some regular hot sauce or maple syrup. YUM).

Finally, fold over and admire thy breakfast taco creation.
